One of our favorite family treats that we have been making for many years is peanut brittle. I have fond memories of making this sweet treat with my grandmother when I was a child. I would watch in wonder as the sugar slowly turned into the brown sweet liquid, and when the peanuts were added I knew it was almost time to taste… almost!

I look back at those memories and I smile. I wanted to whip up a batch with a slight yummy twist, the addition of a sweet crunchy topping of  GH Cretors Just the Caramel Corn. Here is our family recipe with that delicious popcorn twist: 

GH Cretors Just the Caramel Corn Peanut Brittle

Ingredients:

1 cup sugar

1 tsp baking soda

2 Tbsp butter

1/2 cup corn syrup

1/4 cup water

1 3/4 cup peanuts (salted or plain)

1 cup GH Cretors Just the Carmel Corn

Directions:

Before starting, be sure to grease a baking pan (use a pan with sides) set this aside. Use a medium saucepan and combine the corn syrup, sugar, water and butter stir the mixture on medium heat until this boils. When this starts to boil reduce the heat and cook for a low boil for about 30 minutes. After is stir in peanuts, you can use unsalted or salted. If you choose to use salted, the brittle will have more of a “salted caramel” taste, and that seems to be popular these days. 

But it is your choice, whatever you think would be best. After the nuts are added stir frequently or about 12 minutes. Remove from the heat and stir in the baking soda. Continue to mix then transfer to the greased baking sheet and carefully spread the mixture on the pan. As soon as this is spread on the pan, sprinkle on the caramel corn. Let completely cool before breaking apart and enjoying.

This is pretty easy to make and comes out amazing. This looks like the high end peanut brittle you can purchase at department stores, and tastes even better. Simply pick up some treat bags, with a ribbon and a tag and you will be ready to share this sweet treat.  This makes such a cute addition to a package, a wonderful co-worker gift, a great hostess gift, or just a last minute treat to place on the table for snacking.
