Even though summer is winding down the summer heat is still here. I know there is an ingredient in your cupboard that you may use for so many of your favorite holiday treats and goodies but this ingredient may not get as much use during the summer months, and that is sweetened condensed milk. I know I have so so many cookie bars and other sweets that I make with Eagle Brand Sweetened Condensed Milk for the winter months but for the summer I never realized how many great recipes you can make with this ingredient, a staple in my cupboard.

- Prep Time: 20 Minute
Ingredients
- 1/4 cup butter
- 1 (14 oz.) can Eagle Brand® Sweetened Condensed Milk
- 1 1/2 cup finely crushed vanilla wafer crumbs
- 6 tablespoon pre-sweetened lemonade flavor drink crystal
- 1 envelope unflavored gelatin
- 1 1/2 cup water, divided
- MELT butter in small saucepan; stir in wafer crumbs. Press firmly onto bottom and up sides of 9-inch pie plate; chill.
- SOFTEN gelatin in 1/4 cup water in small saucepan. Heat until dissolved over low heat; set aside.
- COMBINE sweetened condensed milk, remaining water, and drink crystals in medium bowl; mix well. Stir in gelatin mixture.
- POUR into prepared crust. Chill 3 hours or until firm. Garnish as desired.
I love recipes that use staple everyday items in your pantry and refrigerator things that you don’t really have to shop for… Being a working mom, I am at work all day and when I get home I use what we have on hand it is something I do all the time. I was happy to see that we had about 90% of the ingredients readily available, but no vanilla wafer crumbs, but we had graham cracker crumbs, so that was a quick substitution. The pie was very easy to make prepare the pie crust then let that cool… Then head off to work on the pie filling. This pie is unique in that it does not call for lemon juice, or lemon pudding so this was a totally different non-bake lemon pie experience for me.
Whipping up the wet ingredients was a breeze… We were looking forward to seeing how sweet this would be with the pre-sweetened lemonade flavor drink crystals and the sweetened condensed milk… and surprisingly it was just the right amount of sweetness, not overly sweet at all. The pie calls for 3 hours or until firm, but we found that keeping the pie overnight was the best for us. My family just loved the smooth lemon taste of the pie, it was yummy. We will surely be making this again.
