Enjoy brunch with a Italian Broccoli & Cheese Frittata made with Nellie's Free Range Eggs & Cabot Cheese #Recipe #Giveaway


Being a busy working mom I love to treat my family to nice Sunday brunch for us it is the best meal of the week, and what is brunch without eggs? Well not one of our favorite brunches that is for sure. We recently returned from vacation and our cupboards were a bit bare, but I had to come up with a meal that my family would love... What to do? Well make a delicious frittata with what I had on hand. As moms you know the feeling sometimes you just have to use what is in the refrigerator. With the help of Nellie's Free Range Eggs and Cabot Cheese I put together an amazing (if I do say so myself) Italian Broccoli and Cheese Frittata, it was super easy and my family loved it. 


Italian Broccoli & Cheese Frittata

Ingredients:

Nellie's Free Range Eggs
1/2 cup cooked pasta
1/2 teaspoon oregano
1/2 teaspoon paprika
1/2 teaspoon cumin
1/2 teaspoon salt
1/2 teaspoon pepper
1 clove of minced garlic
2 Teaspoons of olive oil
1/2 cup of broccoli
1/2 red pepper 
1/2 bar of Garlic & Herb Cheddar Cabot Cheese
Parmesan cheese (for topping) 

Directions: 

Set oven to 400 degrees. If you prefer a softer vegetable, like my family does mix heat 2 Teaspoons of olive oil, in saute pan then add 1/2 cup cooked pasta, 1/2 teaspoon oregano, 1/2 teaspoon paprika, 1/2 teaspoon cumin, 1/2 teaspoon salt, 1/2 teaspoon pepper, 1 clove of minced garlic,  1/2 cup of broccoli, and 1/2 red pepper. Cook on low for about 30 minutes.  
If you have a cast iron pan this is best, but I never picked one up so I went with a pie dish, and all worked out just as well. As long as the full pan can go in the oven that will work.  Butter the bottom and sides of the pie dish, then pour mixtures of veggies and spices and spread across the pie dish. 

In a separate bowl start to beat the Nellie's Free Range Eggs, when they are blended simply add the eggs to the top of the veggie/spice mix on the top of the pie dish. Cut thin slices of  Garlic & Herb Cheddar Cabot Cheese and top on the egg mixture. Bake for 10-15 minutes. If the eggs are not set in the middle, cook for an additional two minutes. Let sit for 5 minutes before topping with a sprinkle of Parmesan cheese then cutting and enjoying.


My whole family enjoyed this yummy brunch, it was so good that I am sure this will be made again, for breakfast lunch or dinner, it would work for either. If you have really little ones, it would be fun for them to cut out their portion of frittata using some fun characters with egg molds or cookie cutters. I like a good omelet with cheese, but I think my favorite thing is potato salad, not traditional obviously, but with eggs, bacon, cheese, potatoes, etc. It's good stuff.
