Are you stuck in a rut with family meals? I know at times it
seems like I make the same thing again and again, and I think my family is
noticing this as well. As a busy working mom it can be hard to try new things
cooking wise, I know what I can make and what is easy for me, and I like to
stick with that. But I can admit it is good for everyone to switch it up from
time to time.
This past weekend I dug and old recipe out of my recipe box, one I
haven’t made for ages, a recipe that was passed down from generation to
generation in my husband’s family, Chicken Paprikash. This classic Hungarian
dish is usually made with chicken breasts, and accompanied with dumplings. I
wanted to take this classic recipe and put my own spin on it and I came up with
Chicken Sausage Paprikash with Rice, made with al fresco chicken sausage and
Minute Rice. This easy to prepare dish will have your family asking for
seconds!
Ingredients:
4 links of al fresco chicken sausage (your favorite flavor)
1 cup of Minute Rice
1 Large Onion
2 Cloves of Garlic
1 Medium Green Pepper
2 tomatoes
2 Beef Boulion cubes
2 tbs oil
2 tbs margarine
salt and pepper
3 cups of water
2 Tbs of Paprika
Directions:
Cut onions, and sauté in 2 tbs oil, and 2 tbs margarine,
salt and pepper, add chopped garlic, and 1.5 cups of water, cook for 10-15
minutes. Mix in 2 table spoons of Paprika, add sliced chicken sausage and the
remailing 1.5 cups of water, bring to a boil. Add chopped peppers and tomatoes
and 2 beef bouillon cubes mix well. Cook on low for 1 hour. Prepare rice separately as directed on
package. Serve Chicken Sausage Paprikash, over prepared rice, add as much or as
little broth as you would like, and enjoy!
I haven’t made this dish in ages, but this was just as delicious as I remembered. The addition of the chicken sausage and the rice was a nice way to switch up a family recipe, but it still tasted like I remembered. My family loved this dish. My husband raved over the little kick in the sauce and how delicious the chicken sausage was. I have to admit this was amazing, and I will surely be making this again.
