Toss in the Flavor with Redpack Tomatoes for National Salad Month! #Giveaway

We are tomato people!  We have no other vegetables to fall back on, unlike some giant vegetable mega-companies.  No one is as dedicated to growing the perfect tomato as we are!  To us, the tomato is an all–day, all-year, lifetime endeavor…our family has dedicated four generations to tomatoes...and tomatoes alone!  We harvest our fields when the tomatoes are at their ripest, and carefully treat those tomatoes with the respect they deserve, until they’re tightly sealed and on their way to you.  We go to the extremes to make sure every can of Redpack tomatoes are as fresh as the day we picked them!

 I have to say I am a fan of Redpack Tomatoes.  I have used them in the past and have been impressed with the quality and the taste. As a working mom, it is hard to get a homemade dinner together when I get home. I have to admit after a long day at work, when I come home I am tired and sometimes I do not feel like cooking. But my family has to eat right? I have to make something. Redpack Tomatoes, it is nice to have a real tomato to make my sauce or add to my meal.

Sure I could get fresh tomatoes and cut them up and add them, but I barely have time to make dinner let alone shop for veggies… (I wish I had the time really). It is nice to know my family can get fresh tomatoes with Redpack Tomatoes, and I love that they are good for a good while and I will not have rotten tomatoes that I never got to use. 

The tomatoes are fresh tasting, and  delicious. The weekends are when I really cook. I cook and cook and cook. I try to prepare for the week (when I can).  You can make these great tomatoes in a sauce, with pasta with rice and with my new favorite tossed in a salad! While checking out the Redpack website, I found quite of few recipes that I will have to make starting with this:

SASSY CHICKEN SALAD
MAKES 6 SERVINGS
PREPARATION TIME:  20 MINUTES

1          (10 ounce) can RED GOLD® DICED TOMATOES & GREEN CHILIES,drained
½         cup light mayonnaise
1          tablespoon honey
2          cups chunked cooked chicken breast
1          cup thinly sliced celery
1          cup grapes, halved
⅓         cup chopped toasted pecans
· In a medium bowl, combine RED GOLD® DICED TOMATOES & GREEN CHILIES, mayonnaise and honey.  Stir in chicken, celery, grapes and pecans.
· Cover and chill.  Maybe served in hollowed out melons, avocados or papayas. Also makes a great sandwich when served on a Croissant. 

Cooking Hint:
To toast pecans, bake uncovered in ungreased shallow pan in 350o oven for about 10 minutes, stirring occasionally, until golden brown.  Another option is to toast them in the microwave.  Place a single layer on a microwave safe plate and cook on high for 2 minutes.  Stir and cook for 1 more minute.

It sure sounds different, and delicious.  And not that difficult to make. I will have to let you guys know how this turns out. We were also able to try out some delicious tomato juices. The juices were flavorful and fresh a great way for my daughter eat her vegetables and enjoy the flavor at the same time. I learned that the average pizza contains about four tomatoes or about one cup of Redpack Tomato Sauce. This is equal to one serving of Fruits and Vegetables. Also I would like to make the Broccoli Stuffed Tomato Halves recipe.
