I was very fortunate to be able to check out The Bee’s Knees, a great honey and peanut butter blend…   

The Bee's Knees - Our all-natural peanut butter blended with scrumptious honey. The Bee's Knees is a delicious new way to enjoy our peanut butter. You can really taste the honey in this new variety, which promises to become a new classic in sandwiches and snacks across the country. It contains no cholesterol, no trans fats, no hydrogenated oils, and no high-fructose corn syrup. It is also gluten-free, vegetarian, and certified kosher pareve by the Orthodox Union. The shelf life is 6 months after opening, if stored in a cool, dry place.

 I was ready and I could not wait to bake! What to make? Well I know I loved making cookies with my mom as a kid, and my daughter enjoys baking with me as much as I loved baking with my mom. We decided on making something a friend had told us about, we switched it up a bit and came up with amazing Honey Peanut Butter and Apple Butter cookies.

 Honey Peanut Butter and Apple Butter cookies

Makes 4 dozen cookies:

½ cup butter

½ cup Peanut Butter and Company the Bees Knees (honey peanut butter)

½ cup sugar

½ cup light brown sugar

1 egg

½ teaspoon of vanilla

2 tablespoons of apple butter

2 cups of flour

½ tea spoon of baking soda

¼ teaspoon of salt

¼  teaspoon of cinnamon

½ cup of additional sugar

Keep ½ cup of sugar in a bowl, aside. Mix Butter, and peanut butter. Add sugars egg, vanilla and apple butter. Mix flour, baking soda, salt, and cinnamon, stir into creamed mixture. Roll mix into ½ inch balls, then roll the balls into the extra sugar.  Place balls on cookie sheet about one inch apart (I used parchment paper, a must for me when baking cookies, they never stick) Flatten each ball slightly with the back of a fork. Bake at 350 for 10-12 minutes. 

These cookies came out amazing! The cookies were soft and had a great touch of honey peanut and apple flavor that my family loved.  This would be a great recipe to make with the kids, the kids could be in charge of rolling the cookie balls and dipping them in the sugar. These would be great to make together for any spring get togethers  and would be great for a gift for mom, or grand mom any cookie lover in your life.
