I have to say I am a fan of Dei Fratelli Tomato
products. I had never tried them before… why, I don’t know. I have been
missing out. I received a

As a working mom, it is hard to get a homemade dinner
together when I get home. I have to admit after a long day at work, when I come
home I am tired and sometimes I do not feel like cooking. But my family has to
eat right? I have to make something. Dei
Fratelli Truly Tomato products, it is nice to have a real natural tomato to
make my sauce or add to my meal. Sure I could get fresh tomatoes and cut them
up and add them, but I barely have time to make dinner let alone shop for
veggies… (I wish I had the time really). It is nice to know my family can get
fresh tomatoes with Dei Fratelli, and I love that they are good for a good
while and I will not have rotten tomatoes that I never got to use.
I used the tomatoes to make a crock pot meal. A slow cook meal that would be healthy for my family and taste great at the same time. This was a quick meal idea that only had a few ingredients that I had on hand including:

Slow cooked Southwest chicken chili
2 lb pack of Chicken
1 tbs chili spice
1 tbs cumin
1 teaspoon of salt
1 teaspoon of
cilantro
½ teaspoon of
pepper
1 green pepper
1 large onion
2 cloves of garlic
1 pack of frozen corn

Add cleaned chicken
chopped vegetables. Spices, juice and tomatoes to your slow cooker. Cook on low
for 7 hours.
My daughter was a big fan, saying “this is yummy” and asking
for seconds. The tomatoes are fresh
tasting, and delicious. The weekends are when I really cook. I cook and
cook and cook. I try to prepare for the week (when I can). While checking out
the Dei Fratelli website, I found quite of few recipes that I will have to make
starting with this:
Ratatouille (Vegetable Stew)
Ingredients:
Ingredients:
- 1 750 grams box of Dei Fratelli Truly™ Rustic Cut Tomatoes
- 1 cup olive oil
- 1 large onion, finely chopped
- 1 green pepper, finely sliced
- 1 red pepper, finely sliced
- 1 bouquet garni – several parsley stems, celery leaves, and sprigs of thyme wrapped in a leek and securely tied with cotton twine.
- 4 cloves garlic, minced
- 6 - 7 small zucchini, scrubbed, trimmed, and cut into matchsticks
- 2 teaspoons fresh thyme leaves
- 3 small eggplants (about 11/2 pounds), peeled and cut into matchsticks
- Pinch of Saffron threads (optional)
Preparation:
In a large skillet, heat 1/4 cup of olive oil, add onions and a pinch of salt. Cook over low heat until soft and translucent, about 5 minutes. Add the peppers and a pinch of salt. Cover and continue to cook for 5 minutes. Add tomatoes, stir and continue to cook for another 5 minutes. Stir in bouquet garni, and garlic. Taste and correct seasoning as necessary. Cover and simmer gently for about 30 minutes, the vegetables should be cooked through but not mushy. In another skillet, heat the remaining ½ cup of olive oil over moderate heat. Add the zucchini and cook until lightly browned, about 5 minutes. Transfer to a colander to drain any excess oil. Season with thyme and salt and set aside. In the same skillet heat the remaining ¼ cup of olive oil. Add the eggplant and cook until lightly browned, about 5 minutes. Transfer to a colander to drain any excess oil. Add the zucchini and eggplant to the tomato mixture. Taste; and correct seasonings as necessary. Add Saffron. Cover and simmer for 30 or so minutes. Serve warm or at room temperature.

This will be what I am making next. It sure sounds
different, and delicious. And not that difficult to make. I will have to
let you guys know how this turns out. We were also able to try out some delicious
tomato juices. The juices were flavorful and fresh a great way for my daughter
to drink her vegetables and enjoy the flavor at the same time. So if you are
looking for tomato products, for sauces or add to recipes I would recommend Dei
Fratelli. I was very impressed with the quality of the products. And I am now a
fan of Dei Fratelli for life! Give them a try you will become a fan too!
