During this part of the interview, Gwyneth
talked candidly about issues she had that led her to the doctor herself. She was
steadily wearing herself down. Gwyneth went to the doctor and got tested, for
everything. She had high stress hormones- they were, killing her adrenals. She had low vitamin D, vitamin B; her
estrogen was messed up, everything was just off. Other doctors said to, go on
this medication; get a surgery; but this doctor said to her, for three weeks,
eat an elimination diet. Eat super
clean, just like how your ancestors would’ve eaten like chicken, fig,
vegetables. No coffee, no alcohol, no sugar. She followed the doctors’ orders,
and began to see a difference.
Gywneth, is so inspirational. If she
can do it, so can I, I know my family could stand to eat healthier and with all
of the great recipes in the cookbook I know I will make sure cook healthier for
my family, it is better for us all.
Here are some of my favorite questions
from the interview:
Question: How did you get into doing cookbooks?
Gwyneth Paltrow: I started writing down my recipes because I was
always a cook and a foodie. I had a lot
of friends kind of asking me how do you do that, or like all my friends would
be, like, what temperature do I roast this at?
You know, what’s an easy dinner? So
I started writing them all down.
this book I did basically because
my son has really bad eczema, (her son had) food allergy tests, and he’s really
allergic to gluten and cow’s milk. And I
felt so bad for him, ... not having regular ice cream, meat balls and
stuff. I’m gonna just make him, a
mini-encyclopedia of totally yummy comfort food. And it’s been incredible
because so many people are trying to avoid gluten either for weight or, you
know, they’re allergic to it, that’s sort of how it all happened.
Question: What advice do you have regarding the best nutrition?
Gwyneth Paltrow: Someone told me the best thing; a nutritionist
once told me, the way that we’ve changed our diet in the last fifty years is
crazy. If you showed our grandmothers,
our great grandmothers what- the way we were eating, they’d be like, this isn’t
even food. What are you doing? The nutritionist said to me, when you’re at
the supermarket, shop the periphery. That’s where all the fresh food is, that’s
where the chicken, fish, beef everything fresh is on the periphery. I try to cook really healthy at home because
I can’t control what they (the kids) eat at home or at friend’s houses. Nor do I want to. Like, I want them to be autonomous and have-
make their own choices and have a life. I think that that’s their balance; and
my balance is, like, I try to cook healthy at home, and then out, I’ll eat
whatever I want to.
Question: How do you keep your kids healthy when you’re away from home?
Gwyneth Paltrow: we were
just in Paris; I was on the Iron Man press tour. I mean, try eating gluten free in Paris. It is a nightmare. My poor child. So you know what I try to do? I mean, he totally ate a croissant; he ate
bread, and it was inevitable. There
were- but you know what, one day I was like, let’s go find Japanese food. I think, Asian foods, Mexican, that, like,
those are all really what a great way to avoid it when you’re out.
Question: Do your kids cook with you a lot?
Gwyneth Paltrow: Oh
yes. My son, especially, is really,
really into it, and he can, perfectly crack an egg. He has since he was four- no shells in the
bowl. Every weekend, we’d cook something
together. He loves it.
And I do that a lot with my kids in
the kitchen. I actually think that the
kitchen is an amazing place to interact and teach kids. We do math in the kitchen with, like, how
many- okay it says, like two thirds of a cup?
That time and it’s such quality time of interacting but, you’re also
making dinner, you’re doing something that you need to do anyway.
Question: When you cook, do you rap?
Gwyneth Paltrow: Do you have
a hidden camera in my kitchen? Yes, we
are a hip hop household, a hundred percent.
My son, especially.
I love the cookbook and I could not
wait to make something yummy for my family so last night I made a great recipe
from the book, Thai Chicken. This was super easy to make, so easy that I had
most of the ingredients in my home already (and this is always a plus for a
working mom like me). My family loved this easy to make tasty dish. I have to
admit it was so delicious! And it looked amazing. Here is a picture, what do
you think?
Chicken Burgers, Thai
Style
I understand the stress and the craziness of being a working mom, I know that I have to stop and take care of myself at times, I cannot just keep going and ignoring my health. If you have someone in your life that has to eat gluten free, or if you would like to eat better, a more healthy lifestyle I would recommend checking out this great cookbook “It’s all Good”.
1 pound ground chicken (preferably dark meat)
2 garlic cloves, very finely minced
2/3 cup cilantro, finely chopped
2 shallots, very finely minced
1 teaspoon finely minced red chili (or more or less however
hot you like it)
2 teaspoons fish sauce
½ teaspoon coarse sea sale
½ teaspoon freshly ground pepper
2 tablespoons neutral oil (like canola, grape seed, or
safflower oil)
Mix chicken, garlic, cilantro, shallots, red chili, fish
sauce, sea salt and pepper together. Form into 4 burger patties about one inch thick. Heat pan,
and add the oil, cook patties on one side for 8 minutes, then flip and cook for
5 minutes on the other side.
