Do you love to cook? As a working mom, it is sometimes hard
for me to cook everything, it can be so time consuming. But I love to cook, it
just relaxes me and my daughter loves to help me out as well. So cooking for me
is a bonding experience with my daughter and she loves it too.
Are you a fan of Hodgson Mill , a family owned company that
has been around for over 125 years! They produce wonderful stone ground whole
grain and organic premium ingredients. Why not make something for your family
that is healthier for them, and tastes delicious.
I put together a delicious pastry cookie, kipferl pastries
kipferl’s are traditional Austrian pasties, they are like
small danishes in a way, they are light and flaky and filled with fruit
filling.
I would like to share this recipe with you all hope you love
it as much as we do.
Kipferl’s
2 sticks of cream cheese
2 sticks of butter
1 teaspoon of vanilla
A container or your favorite jam or jelly ( I used 2
different kinds, apricot and strawberry)
2 cups of Hodgstons Mills wheat pastry flour
Powdered sugar to sprinkle on top
Leave butter and cream cheese out to get room temperature,
then blend them well, add the vanilla. Mix in the flour. When well mixed form
the mixture into a ball, then put into the refrigerator for about an hour. The
mixture will be easier to work with when it is cold. When the dough is cold,
roll into nickel sized balls, then refrigerate for another hour (I know this
may seem like a lot of work, but it is worth it). After the balls are cold,
flour the surface of your cooking area, using a rolling pin roll the balls into
thin sheets. When the sheet is ready, place a teaspoon of jelly then carefully
roll into a moon shape.
Bake at 350 for 20 minutes. Then when cooled sprinkle with powdered sugar
and enjoy!
You may ask, where are the eggs? Well there are none in this
recipe, and they come out wonderful trust me. These cookies are almost like little cakes,
they are divine your family will love them!
