Summer is almost here and you know what that means! Well it means plenty of events to attend this summer. There will be graduations, July 4th celebrations, birthdays and of course Father’s Day! Oh those events will be here before you know it, and what are you going to be bringing to those events? Well how about bringing a great pie, or cake? Something made with love? I would recommend something from Lucky leafs new summer recipes.
Before I tell you guys about the great recipe’s that I tried I have to share some wonderful news with you, I will be taking a trip to the LuckyLeaf Orchards in Pennsylvania. I will get to see how they make the delicious pie fillings from start to finish. What a unique experience that will be! I will filling you all in with all of the great experiences I will have on that trip, that is for sure. Make sure to check back! I was a busy little baker this weekend. We had a few friends
over and I figured it was a great time to try out some new recipes. I wanted to try some of the great summer recipes.
Let’s start out with my absolute favorite! The Perfectly
Peach Cinnacake, this was amazingly easy to make, if you have the essentials
and a boxed cake mix and a can of Lucky Leaf peaches you are good to go! My
daughter helped me to make this sweet delight.
This took literally minutes to put together and only 35 minutes to bake.
I wanted to share half of this cake with my co-workers
(since this makes 12 servings I had plenty to spare) and my co-workers were
delighted and jumped at the chance to try this Perfectly peach cake… And how
did they like this? Well they devoured it! And one asked for the recipe right
away. I was happy to share this easy recipe with her. As a working mother she
just loved the ease of this cake as well. This is a cake that would work
wonderfully with someone traveling to an event.
This cake is solid, and will travel well. I was able to wrap this in tin foil and carry this to work and it arrived in great condition. So if you have to travel, and tote the cake along I would recommend the Perfectly PeachCinnacake, this will stand up to traveling and will last for a few days. Well the cake may stay fresh for a few days I am sure the cake will not be around for a few days. It is so light and delicious this will be one of the first items to go at you party I am sure of it!

Frozen Pie Pops, what a great cool summer treat! I know it is still spring, but with the weather we have been having here in the northeast, the hot an muggy days. The frozen pie pops were here just in time. My daughter loved making these pops, and could not wait for them to freeze, while asking me every 10 minutes are they frozen yet? Well luckily (for my sanity) they did not take that long to freeze and enjoy. In about 2 hours my daughters pop was ready.
She proclaimed this as her favorite pop ever! I have never thought of using pie filling as an ingredient to make ice pops. Well I don’t know why I didn’t ever think of it, it is a great idea. Real fruit pops? Yes, that is great. I would much rather give these pops to my daughter than the chemical filled pops they have in stores.
Fruit Cookie Pie, this was a very simple cookie dough, whipped topping and pie filling of your choice. We went with a sugar cookie cruse with blueberry topping. Simply put the cookie dough in the pie crust, bake then mix the Lucky Leaf pie filling with the whipped topping. Easy as pie right? This was a hit with my guests as well. They loved the combination of the blueberry and the sugar cookie. There are so many ways you could make this pie, why not strawberry filling, with a peanut butter cookie. Or apple filling with chocolate chip? Whatever you want, there are so many possibilities!
Here is a tip, just because the recipe seems simple does not
mean it does not taste like it took hours to make. These simple quick recipes are great for
busy mothers like me, who want to give their best but only have a short time to
do it!
