Don’t you just hate when you buy green bananas, and plan to have them ripen on the top of the refrigerator? Well I tried that this week, and I forgot that they were there! And when I saw them it was too late, they were too ripe. What to do? Well I wanted to make Banana bread for the first time, I used this recipe:
Very Moist Banana Bread
1 1/2 cups sugar
1/2 cup butter
2 eggs
1/4 teaspoon baking powder
1/2 teaspoon baking soda
1 1/2 cups flour
1/2 cup butter

1/2 teaspoon baking soda
1 1/2 cups flour
1/2 teaspoon cinnamon
4 large very ripe bananas, mashed
1 teaspoon vanilla extract
4 large very ripe bananas, mashed
1 teaspoon vanilla extract
Blend together sugar, butter, and eggs. Add dry ingredients. Add mashed bananas, and vanilla extract. Pour into a greased loaf pan.
Bake at 375°F degrees for 1 hour.
This turned out very well! My husband said it was the best Banana bread he has ever had. And just raved and raved about it. So if you have some bad bananas, why not use this for some good bread.
