Lucky Leaf Lemony Blueberry Layered Pie #Recipe




Are you a fan of Lemon and Blueberries? Well I have a great recipe for you!

This recipe is very simple, and even with my busy schedule it was a snap for me to put tighter and my family loved it!

My parents were coming down to visit for the day and I wanted to make something special for them, and my time was short they were going to arrive in less than an hour… What could I make?? I needed something that did not require baking (but something that tastes like it took forever to make) I decided to make the quick and easy to make, Lucky Leaf Lemony Blueberry Layered Pie.








The pie was slightly sour from the lemons, the blueberries had just the right sweetness to cut the sour taste of the lemons. The two flavors went very well together.  My father asked me if this was made from scratch, because it was so good…. I told hom how easy it was to make, and he was surprised.

This was a big hit, and I would make this again in a heartbeat. I thought it was delicious, and it reminded me of my favorite pie of all time , a Key Lime pie, just with a lemon twist and a blueberry surprise.

Lucky Leaf Lemony Blueberry Layered Pie


Ingredients

1 graham cracker crust for 9-inch pie
1 8-ounce package cream cheese, softened
1 14-ounce can sweetened condensed milk
½ cup powdered sugar
1 3.4-ounce box instant lemon pudding mix
2 teaspoons fresh lemon zest
½ cup freshly squeezed lemon juice
1 21-ounce can Lucky Leaf® Premium Blueberry Pie Filling

Directions

Combine cream cheese, condensed milk and powdered sugar in a large bowl. Using an electric mixer, mix at medium speed for 1-2 minutes, until smooth.

Add pudding mix, lemon zest and lemon juice; mix until well blended. Spoon about half of Lucky Leaf® Premium Blueberry Pie Filling evenly into bottom of graham cracker crust. Spoon lemon-filling mixture on top and spread evenly. Cover and chill for at least 1 hour.

Spoon remaining Lucky Leaf® Premium Blueberry Pie Filling on top just before serving. Garnish with fresh lemon zest if desired.

Makes 8 servings.
